The doyenne of Aussie home-cooking seemed genuinely upset that she has set such a hard challenge, as she’s best known for recipes such as this classic Lemon Delicious, as featured in this month’s issue of MasterChef Magazine.

MAGGIE BEER'S LEMON DELICIOUS

Cooking these puddings in a water bath at a low temperature gives them a lighter and creamier texture.

SERVES: 6
PREPARATION: 30 MINS
COOKING: 1 3/4 HRS

60g unsalted butter, softened, plus extra, to grease
220g (1 cup) caster sugar
1 tbsorange marmalade
3 eggs, separated
60g self-raising flour
350mlmilk
2 lemons, zested, juiced, plus extra zest, to serve
Icing sugar and pouring cream, to serve

  • Preheat oven to 100C. Lightly grease 2 x 600ml ovenproof dishes. Using an electric mixer, beat butter, caster sugar and marmalade until mixture is thick and pale. Add egg yolks and beat until well combined. In alternate batches, gradually add flour and milk, beginning and ending with a batch of flour. Add lemon zest and juice, and stir to combine.
  • Using an electric mixer, whisk egg whites to stiff peaks, then gently fold into lemon mixture.
  • Divide batter between the prepared dishes. Place in a large roasting pan and fill pan with enough boiling water to reach two-thirds up the sides of the dishes. Cover pan tightly with a greased sheet of foil, then bake for 1½ hours. Remove foil, increase oven to 180C and bake for a further 15 minutes or until puddings are light golden. Turn off oven and rest puddings inside oven for 10 minutes.
  • Dust puddings with icing sugar and scatter with extra lemon zest. Serve immediately with pouring cream.
